From Chaos to Calls:

The Power of a Plan

In competition BBQ, the difference between walking the stage and packing up early rarely comes down to passion. It comes down to preparation. When you’re juggling meat timelines, turn-in windows, equipment, weather, teammates, and sleep deprivation, your brain becomes your weakest link. That’s where checklists earn their place—not as busywork, but as insurance. A solid checklist removes guesswork, protects you from costly oversights (like forgetting parsley, sauce bottles, or a critical probe), and frees up mental space so you can focus on flavor and execution. The best teams don’t rely on memory; they rely on systems. And in a sport where one missed detail can cost a call, a well-built checklist isn’t optional—it’s competitive advantage.

The Bare Minimums of a Competition Site Setup

  • Meats and their Prep: Brisket, Pork, Ribs & Chicken, Cutting Boards, Knives (prep and finish), and Plastic Freezer Bags (raw meats and leftovers)

  • Smokers and Fire Management: Offsets and/or Drum Smokers, Charcoal, Chimney, Firestarters, Hardwoods, Heat Resistant Gloves, Ash Buckets

  • Portable Kitchen Site: Folding Tables with Extensions, Cambro/Coolers, Paper Towels, Plastic Gloves

  • Clean-up: Totes for Dirty Dishes and/or Washing Stations, Water, Soap, Method for Heating Water, Clorox Wipes, Dish Towels, Paper Towels

  • Site Comforts: Loungers/Cots/Pillows/Blankets/Tent/Pop-up Shade, Wet Wipes, Ibuprofen, Electrolytes, Water

  • Box Turn-ins: Kale/Parsley/Green Leaf Lettuce

  • Dressings for Meats: Marinades/Injections/Rubs/Sauces

Building a Repeatable Competition System

Once your gear is packed and your checklist is dialed in, the next thing that separates an average weekend from a confident one is timing. A successful cook can’t happen without attention and intention. Fire management, meat rotation, wrapping, resting, and turn-in windows all overlap quickly, and without a clear timeline, you can find yourself reacting instead of executing. A written schedule keeps your weekend proactive instead of chaotic. Below is a sample offset smoker timeline you can use as a starting point—then adjust based on your pit, your process, and your flavor profile.
